It being summer, Lisa and I felt compelled to make our berry torte this week. It tastes SO GOOD!! It’s just the right balance of tart and sweet. It’s got a nice thin crust made from dates and the top part is this amazing taste explosion of berries. We also like to sprinkle some coconut flakes on top to change the texture. We usually make it with raspberries only and that tastes great. Once we made it with blueberries, and OMG, it was SO sweet!! This time we took a chance and did half raspberries and half blueberries (with less honey) and it is absolutely perfect with that combo.
Other than tasting so yummy, this cake is also very healthy. It has no gluten, no grains, no eggs, no dairy, no sugar. Because of our management of autoimmune issues, we are careful with what we eat. This is the type of thing we make for ourselves as a treat without any fear of getting sick which makes eating a dessert guilt-free.
This is the best time of year to take advantage of the fruit harvest. We feel so fortunate to be able to benefit from all of nature’s bounty. 😊♥️
