Vegetables I Eat Everyday

I don’t consider myself a foodie. However, I do consider food to be one of the most essential facets to my health & well-being. Battling Crohns and other auto-immune issues means that I follow a VERY strict diet. I’m “-free” everything: gluten, dairy, grain, legumes, alcohol, caffeine, pork, fish, and probably more things I can’t think of right now. What’s left? Poultry, beef, fruit, and most importantly, vegetables!

Yes, the wonderful array of vegetables is my life-saver. While it’s unfortunate that I do have an intolerance to some, I still have a wide cavalcade at my disposal that gives me nutrients and energy on an everyday basis

Here’s a list (always organic BTW) that I eat pretty well every day or week…

Breakfast:
lettuce (any except for iceberg)
zucchini
radishes
olives

Lunch:
carrots
cabbage
beets
peppers
potatoes

Dinner:
broccoli
cauliflower
sweet potato
brussel sprouts
asparagus
collard greens
kale
garlic
onions
ginger
